Luscious Lemon Bars
You will think you have died and gone to heaven! These are much lighter than regular lemon
bars but you will never miss the fat, they taste almost identical to the
original.
Crust:
1 cup all-purpose flour
¼ cup powdered sugar
½ cup quick oats
3 T. butter or margarine
Mix the dry ingredients and cut the butter in to make a
crumbly mixture. It’s going to be more crumbly than the original. Press into a greased 8 X 8 pan. Bake at 350 degrees until light golden brown.
Filling:
2 eggs
2 egg whites
1 ¼ cup sugar
3 T. flour
¼ tsp. baking powder
pinch of salt
juice and grated zest of 2 large lemons (grated on the small
side of the grater)
Pour filling onto crust, bake for 20-25 minutes until light
golden brown on top. Let it cool and
sprinkle with powdered sugar.
